Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, combine the flour, baking powder, baking soda, cinnamon, and salt. Stir to combine.
- In another bowl, mix together the pumpkin puree, granulated sugar, brown sugar, eggs, melted butter, and vanilla until smooth.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fill each muffin cup about 3/4 full with the batter.
- In a small bowl, mix together the crumb topping ingredients: flour, sugar, cinnamon, and cold butter. Use your fingers or a fork to crumble the mixture.
- Sprinkle the crumb topping over the batter in each muffin cup.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
