Description

Pumpkin Delight is an easy, no-bake layered dessert made with a buttery pecan crust, fluffy cream cheese, pumpkin spice pudding, and whipped topping. Perfect for fall gatherings, Thanksgiving, or when you’re craving something sweet and seasonal without a lot of effort.

  • 3/4 cup salted butter, softened
  • 7 tablespoons light brown sugar
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 3/4 teaspoon pumpkin pie spice
  • 3 tablespoons chopped pecans
  • 8 oz cream cheese, softened
  • 2 cups powdered sugar
  • 8 oz tub whipped topping (Cool Whip), thawed (divided)
  • 2 cups cold milk
  • 3.4 oz instant pumpkin spice pudding mix
  • Additional chopped pecans for garnish (optional)

Instructions

  1. Preheat oven to 350°F and spray a 9×13-inch baking dish with nonstick spray.
  2. In a large bowl, cream together softened butter and brown sugar until smooth.
  3. Add vanilla extract, flour, and pumpkin pie spice. Mix until well combined, then stir in chopped pecans.
  4. Press the mixture evenly into the prepared baking dish to form the crust. Bake for 20 minutes or until the top appears dry and a toothpick comes out clean. Cool completely.
  5. In another bowl, whip the softened cream cheese until smooth. Gradually add powdered sugar, then mix in half of the whipped topping. Gently fold in the remaining whipped topping until no streaks remain.
  6. In a separate bowl, whisk cold milk and pumpkin spice pudding mix for 2 minutes until thickened.
  7. Spread the cream cheese mixture evenly over the cooled crust.
  8. Layer the pumpkin pudding evenly on top of the cream cheese layer.
  9. Top with remaining whipped topping and smooth it out evenly.
  10. Cover with plastic wrap and refrigerate for at least 4 hours or overnight to set.
  11. Garnish with additional chopped pecans before serving.

Notes

  • Use instant pudding mix only — cook-and-serve pudding will not work.
  • Can substitute vanilla pudding with added pumpkin spice if pumpkin spice pudding is unavailable.
  • Dessert can be made a day ahead and stored in the refrigerator.
  • To freeze, wrap in plastic wrap and foil. Thaw in the fridge overnight.
  • Pecans can be omitted for a nut-free version.
