Description

Pumpkin Jack ’n Cheese Bowls are a fun, savory fall recipe perfect for kids and adults alike. These pumpkin bowls are filled with creamy mac ‘n cheese and seasoned ground beef, offering a complete meal that’s festive, delicious, and easy to prepare. The pumpkins themselves make for an adorable serving vessel that adds a seasonal touch to your table.


Ingredients

  • 4 small pumpkins
  • 1 Tbsp olive oil
  • Salt and pepper to taste
  • ¾ lb extra lean ground beef
  • 1 10 oz box organic mac ‘n cheese mix
  • 1 cup finely shredded sharp cheddar cheese

Instructions

  1. Preheat the oven to 400ºF.
  2. Cut the tops off of the mini pumpkins and remove the seeds. Cut out jack-o’-lantern eyes and mouth using a sharp paring knife.
  3. Brush the insides and outsides of the pumpkins with olive oil, then season with salt and pepper.
  4. Place pumpkins on a baking sheet and bake for 30-40 minutes, or until the flesh is fork-tender.
  5. In a skillet, brown the ground beef, then drain the fat and set aside.
  6. Prepare the mac ‘n cheese mix according to the package instructions.
  7. Once the macaroni is ready, stir in the cooked ground beef to make Beef Mac ‘n Cheese.
  8. Once the pumpkins are cooked, remove them from the oven and fill them with the Beef Mac ‘n Cheese mixture.
  9. Top with shredded cheddar cheese and place the pumpkin lids back on. Serve immediately.

Notes

  • Check for doneness by testing the pumpkin flesh with a fork. It should be tender.
  • Use organic mac ‘n cheese for a healthier option with fewer artificial ingredients.
  • Store leftover mac ‘n cheese separately from the pumpkin flesh to prevent the pumpkin skin from becoming tough.
  • If desired, make the dish spicier by adding cayenne pepper or chopped jalapeños to the mac ‘n cheese mixture.
