Description
This pumpkin pie recipe is a creamy, rich dessert with a buttery, flaky crust that brings the perfect balance of flavors. The addition of cream cheese and butter makes this pie extra smooth and indulgent, making it the ultimate fall treat for Thanksgiving or any special occasion.
Ingredients
Scale
- 1 (8-ounce) package cream cheese, softened
- 1 (15-ounce) can pure pumpkin puree
- 1/2 cup butter, melted and slightly cooled
- 2 teaspoons vanilla extract
- 3 large eggs
- 3 1/4 cups powdered sugar (adjust to taste)
- 1 teaspoon ground cinnamon
- 1 teaspoon ground nutmeg (or 1 teaspoon pumpkin pie spice)
- 1/4 teaspoon salt
- 1 all-butter pie crust
Instructions
- Prepare the pie crust according to your favorite recipe or use a store-bought one. Chill it in the fridge or freezer while making the filling.
- In a large mixing bowl, beat the softened cream cheese for 5 minutes until light and fluffy. Scrape down the sides as needed.
- Add the pumpkin puree and continue mixing for another 5 minutes to combine the pumpkin and cream cheese smoothly.
- Add the melted butter (cooled to room temperature) and vanilla extract. Mix for 1 minute until fully incorporated.
- One by one, add the eggs, mixing well after each addition to ensure a smooth filling.
- Stir in powdered sugar, cinnamon, nutmeg, and salt. Mix until smooth.
- Preheat the oven to 400°F (200°C). Pour the pumpkin filling into the prepared pie crust. Place the pie on a baking sheet to catch any spills.
- Bake for 15 minutes, then reduce the temperature to 350°F (175°C) and bake for an additional 42-48 minutes. The center should jiggle slightly when done.
- Allow the pie to cool at room temperature for 1 hour, then refrigerate for at least 4 hours before serving.
- Serve with freshly whipped cream for the perfect finish.
Notes
- Ensure the cream cheese is softened to room temperature to avoid lumps in the filling.
- If the crust starts to over-brown, cover it with foil while baking.
- If you like a less sweet pie, you can reduce the amount of powdered sugar to 2 1/2 cups.
- For a gluten-free version, substitute the pie crust with a gluten-free pie crust.
- Let the pie cool at room temperature before refrigerating to prevent it from sinking in the middle.
