Description

Raspberry Linzer Cookies are a sweet and festive treat, made with a buttery shortbread base and filled with delicious raspberry jam. With their classic peekaboo cutout, these cookies are perfect for holiday gatherings or any occasion that calls for a homemade dessert.


Ingredients

  • 1 cup butter, at room temperature
  • ¾ cup icing sugar, sifted
  • ¼ teaspoon salt
  • ½ teaspoon vanilla extract
  • 2 cups all-purpose flour, sifted
  • ½ cup raspberry jam
  • Extra flour to roll out the dough
  • Extra icing sugar for dusting

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a stand mixer with a paddle attachment, beat together butter, icing sugar, salt, and vanilla extract until light and fluffy (about 3 minutes).
  3. Gradually add sifted flour until just combined. The dough should form a ball.
  4. Remove dough from the mixer and knead by hand for about 1 minute until smooth. Wrap in plastic and refrigerate for at least 30 minutes.
  5. Roll the dough to about ¼ inch thickness on a floured surface. Cut out 3-inch rounds with a cookie cutter.
  6. Use a 1½ inch cookie cutter to cut out the centers of half of the cookies to create a peekaboo effect.
  7. Place cookies on a parchment-lined baking sheet and bake for 15–20 minutes until the edges are light golden. Rotate pans halfway through baking.
  8. Allow cookies to cool completely. Spread raspberry jam over the whole cookies and dust the cutout cookies with powdered sugar. Sandwich the cookies with jam in between.

Notes

  • Ensure the butter is at room temperature for better mixing.
  • Sift the flour before mixing to prevent clumps in the dough.
  • Feel free to substitute raspberry jam with other flavors like strawberry, apricot, or fig.
  • To prevent the dough from sticking, add extra flour when rolling it out or when it gets soft.
  • These cookies can be frozen both before and after assembling with jam. Just layer them with parchment paper when freezing.
