Description

A light, creamy, and elegant Raspberry Mousse made with fresh raspberries, whipped cream, sugar, and gelatin. This refreshing dessert features a silky texture, vibrant berry flavor, and beautiful presentation, making it perfect for special occasions or everyday indulgence.


Ingredients

  • 12 oz (340 g) fresh raspberries
  • 1/3 cup (65 g) granulated sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 2 tsp powdered gelatin
  • 2 tbsp cold water
  • 1 cup (240 ml) heavy cream
  • 2 tbsp powdered sugar
  • Fresh raspberries, for garnish
  • Mint leaves, for garnish

Instructions

  1. Wash the raspberries thoroughly and place them in a saucepan with granulated sugar and lemon juice.
  2. Cook over medium heat for 5-7 minutes until the raspberries break down and become soft.
  3. Blend the mixture until smooth, then strain through a fine-mesh sieve to remove seeds.
  4. Bloom the gelatin in cold water for 5 minutes.
  5. Gently heat the bloomed gelatin until dissolved, then stir it into the warm raspberry puree.
  6. Allow the raspberry mixture to cool to room temperature.
  7. In a chilled bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  8. Fold a small amount of whipped cream into the raspberry mixture to lighten it.
  9. Gently fold in the remaining whipped cream until fully combined and smooth.
  10. Divide the mousse among serving glasses or ramekins.
  11. Refrigerate for at least 4 hours, preferably overnight, until set.
  12. Garnish with fresh raspberries and mint leaves before serving.

Notes

  • Use ripe raspberries for the best flavor and natural sweetness.
  • Straining the puree creates a smooth and silky mousse texture.
  • Do not mix hot raspberry puree with whipped cream, as it can deflate the mousse.
  • For a stronger berry flavor, add a few extra raspberries to the puree.
  • The mousse can be made up to 2 days in advance.
  • Store covered in the refrigerator for up to 3 days.
