- 4 1/2 teaspoons active dry yeast (2 packets)
- 1 pinch granulated sugar (for activating yeast)
- 1 1/2 tablespoons kosher salt
- 8 large eggs, room temperature
- 1/2 cup honey
- 1 1/2 cups unsalted butter, melted and slightly cooled (3 sticks)
- 7 1/2 cups all-purpose flour
- 3/4 cup granulated sugar (for raspberry filling)
- 2 cups freeze-dried raspberries (for filling)
- 1 1/2 cups unsalted butter, softened (3 sticks, for filling)
- 2/3 cup water (for sugar syrup)
- 1 1/4 cups granulated sugar (for sugar syrup)
- 1 cup freeze-dried raspberries, lightly crushed (for topping)
Instructions
- In a measuring cup, combine 1 1/2 cups warm water, yeast, and a pinch of sugar. Let sit for 5–10 minutes until foamy and bubbly.
- Transfer the yeast mixture to a stand mixer fitted with a dough hook. Add kosher salt, eggs, honey, and melted butter. Mix briefly to combine.
- Add 7 1/2 cups all-purpose flour and mix until a soft dough forms and pulls away from the sides of the bowl.
- Transfer dough to a large bowl, cover loosely, and refrigerate overnight (8–12 hours).
- To make the filling, pulse 3/4 cup sugar and 2 cups freeze-dried raspberries in a food processor until finely ground. Add 1 1/2 cups softened butter and process until smooth and spreadable.
- Preheat oven to 350°F (175°C). Grease three standard 9×5-inch loaf pans.
- Divide chilled dough into three equal portions. On a lightly floured surface, roll one portion into a 1/4-inch-thick rectangle.
- Spread about 2/3 cup raspberry filling evenly over the dough, leaving a 1-inch border along one long edge.
- Roll tightly into a log starting from the filled edge. Using a sharp knife, slice the log lengthwise, leaving one end intact.
- Twist the two strands together with cut sides facing upward to reveal the raspberry swirls. Tuck ends under and place into prepared loaf pan.
- Cover loosely and let rise in a warm place until dough reaches the top of the pan, about 45–60 minutes.
- Bake for 30–40 minutes, or until golden brown and a skewer inserted into the center comes out clean.
- While baking, prepare syrup by heating 2/3 cup water and 1 1/4 cups sugar in a saucepan until dissolved. Remove from heat.
- Brush hot loaves generously with sugar syrup. Sprinkle with 1 cup crushed freeze-dried raspberries while syrup is still tacky.
- Cool completely before removing from pans and slicing.
Notes
- Refrigerating the dough overnight improves flavor and makes shaping easier.
- Do not substitute fresh raspberries in the filling, as excess moisture may affect texture.
- If the top browns too quickly, tent loosely with aluminum foil during baking.
- Store at room temperature in an airtight container for up to 2 days or refrigerate up to 5 days.
- Freeze tightly wrapped loaves for up to 2 months for best freshness.
