Description

Raspberry Tiramisu is a refreshing twist on the classic Italian dessert, combining layers of raspberry-soaked ladyfingers with creamy mascarpone. Light, fruity, and easy to prepare, this no-bake dessert is perfect for summer gatherings or elegant dinner parties.

Ingredients

  • Ladyfingers (24 pieces): provide structure and absorb raspberry syrup for soft texture
  • Fresh Raspberries (2 cups): add natural sweetness and vibrant color
  • Mascarpone Cheese (16 oz / 450 g): creates rich and creamy layers
  • Heavy Cream (1 cup / 240 ml): whipped to lighten the mascarpone mixture
  • Sugar (1/2 cup / 100 g): sweetens the cream and mascarpone
  • Raspberry Syrup or Puree (1 cup / 240 ml): infuses ladyfingers with fruity flavor
  • Lemon Zest (1 tsp): adds freshness to enhance raspberry flavor
  • Vanilla Extract (1 tsp): boosts aroma and complements creamy layers

Instructions

  1. Prepare raspberry syrup by blending raspberries with sugar and lemon juice, then strain if desired.
  2. Whip heavy cream until soft peaks form, then fold in mascarpone, sugar, and vanilla extract until smooth.
  3. Dip ladyfingers quickly into raspberry syrup and layer them in a serving dish.
  4. Spread half of the mascarpone mixture over the ladyfingers and sprinkle with fresh raspberries. Repeat layers.
  5. Top with remaining fresh raspberries and a sprinkle of lemon zest.
  6. Cover and refrigerate for at least 4 hours or overnight for best flavor and texture.
  7. Garnish with extra raspberries or chocolate shavings before serving.

Notes

  • Do not over-soak the ladyfingers to avoid sogginess.
  • Ensure mascarpone is at room temperature for smooth mixing.
  • Use frozen raspberries if fresh are unavailable; thaw and drain before use.
  • Prepare a day ahead to enhance flavor infusion.
