- 1 teaspoon baking soda
- 1/2 teaspoon salt

Instructions
- Preheat the oven to 350°F and grease a standard loaf pan or line it with parchment paper.
- In a large mixing bowl, mash the ripe bananas until mostly smooth.
- Add the eggs, melted butter, vanilla extract, granulated sugar, and brown sugar to the bananas. Mix until fully combined.
- In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
- Gradually fold the dry ingredients into the wet mixture until just combined. Do not overmix.
- Fold in the chopped rhubarb and optional nuts evenly throughout the batter.
- Pour the batter into the prepared loaf pan and spread evenly.
- Bake for 55 to 65 minutes or until a toothpick inserted into the center comes out mostly clean.
- Allow the Rhubarb Banana Bread to cool in the pan for 10 minutes before transferring to a wire rack.
- Slice and serve warm or at room temperature.
