Description

Ingredients

  • 1/2 cup brown sugar

  • 1/2 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Wash and finely chop the rhubarb into small pieces.
  3. Cream together butter, granulated sugar, and brown sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  5. In a separate bowl, whisk together flour, baking soda, and salt.
  6. Gradually mix dry ingredients into the wet mixture until just combined.
  7. Fold in chopped rhubarb and optional add-ins like white chocolate chips or nuts.
  8. Scoop tablespoon-sized portions onto the prepared baking sheet.
  9. Bake for 10–12 minutes until edges are lightly golden and centers are set.
  10. Cool on the baking sheet for a few minutes, then transfer to a wire rack to cool completely.
