Description

Rhubarb Crunch is a sweet and tangy dessert featuring a buttery oatmeal crumble layered both under and over tart rhubarb. Perfect for spring, this dessert is ideal served warm with vanilla ice cream or whipped cream.

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×9 inch or 11×7 inch baking pan.
  2. In a medium bowl, combine 1 cup flour, 3/4 cup oatmeal, 1 cup brown sugar, 1/2 cup melted butter, and 1 teaspoon cinnamon until crumbly.
  3. Press half of the crumble mixture firmly into the bottom of the prepared pan.
  4. Spread 4 cups diced rhubarb evenly over the bottom crumble layer.
  5. In a small saucepan, combine 1 cup white sugar, 1 cup water, and 2 tablespoons cornstarch. Bring to a low boil while stirring until thickened and clear.
  6. Pour the thickened syrup over the rhubarb layer evenly.
  7. Sprinkle the remaining crumble mixture on top of the rhubarb and syrup.
  8. Bake for 1 hour or until golden brown and bubbling around the edges.
  9. Allow to cool slightly before cutting into squares and serving with vanilla ice cream or whipped cream.

Notes

  • Frozen rhubarb can be used; thaw and drain excess liquid before using.
  • Press the bottom crumble layer firmly to prevent it from falling apart.
