Instructions

  1. Prepare the rhubarb by cleaning and chopping it into small pieces, about 1/2 inch thick.
  2. Combine the rhubarb, sugar, and lemon juice in a large pot. Stir to combine.
  3. Add water to the mixture and bring it to a simmer over medium heat. Stir frequently to prevent burning.
  4. Once the rhubarb softens, mash the mixture with a potato masher or fork to your desired texture.
  5. Continue cooking for another 10-15 minutes, stirring occasionally, until the mixture thickens to a spreadable consistency.
  6. Test the jam by placing a small amount on a chilled plate. If it wrinkles when you run your finger through it, it’s done.
  7. Pour the jam into sterilized jars, leaving about 1/4 inch of space at the top. Seal and let cool to room temperature before storing in the refrigerator.
