Description

Ricotta Cookies are soft, fluffy, and lightly sweet Italian-style cookies made with creamy ricotta cheese. These tender, cake-like cookies are easy to prepare and finished with a simple glaze for a delicious homemade treat perfect for any occasion.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 1/2 cups ricotta cheese
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 23 tablespoons milk or lemon juice (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In a separate large bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Mix in ricotta cheese and vanilla extract until smooth.
  6. Gradually add dry ingredients to the wet mixture and mix until just combined.
  7. Scoop dough onto prepared baking sheets, spacing evenly.
  8. Bake for 12–15 minutes until edges are lightly golden and centers are set.
  9. Cool completely on a wire rack.
  10. Prepare glaze by mixing powdered sugar with milk or lemon juice, then drizzle over cooled cookies.

Notes

  • Drain ricotta if it contains excess moisture to prevent spreading.
  • Do not overmix the dough to keep cookies soft and tender.
  • Avoid overbaking to maintain the cake-like texture.
  • Add lemon or orange zest for extra flavor.
  • Store in an airtight container for up to 3 days or refrigerate for longer freshness.
