- 1 teaspoon lemon zest
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon salt (or to taste)

Instructions
- Preheat the oven to 375°F (190°C). Arrange the baguette slices on a baking sheet and brush both sides lightly with 1 tablespoon olive oil. Bake for 8–12 minutes until golden and crisp. Remove and let cool.
- Bring a small pot of salted water to a boil. Add the peas and cook for 2–3 minutes until tender and bright green. Drain and rinse under cool water. Pat dry.
- In a bowl, lightly mash the peas with a fork, keeping some texture. Stir in chopped mint, lemon zest, lemon juice, 1/2 tablespoon olive oil, 1/4 teaspoon salt, and black pepper. Adjust seasoning to taste.
- In a separate bowl, whip the ricotta with the remaining 1/2 tablespoon olive oil and 1/4 teaspoon salt until smooth and creamy.
- Spread about 1 tablespoon of whipped ricotta onto each toasted baguette slice. Top with 1–2 tablespoons of the pea and mint mixture.
- Garnish with additional mint leaves, a drizzle of olive oil, and extra lemon zest if desired. Serve immediately for best texture.

- For extra smooth ricotta, strain it through cheesecloth for 30 minutes before whipping.
- Do not over-process the peas; a chunky texture adds better contrast.
- Assemble the crostini just before serving to prevent sogginess.
