- 1 lb hot sausage, uncooked
- 1 (8-oz) package cream cheese, softened
- 1 (10-oz) can Rotel diced tomatoes and green chiles, drained
- 1½ cups Bisquick
- 2 cups shredded Mexican cheese blend
Instructions
- Preheat your oven to 400°F.
- In the bowl of an electric stand mixer, combine the hot sausage, cream cheese, Rotel diced tomatoes and green chiles, Bisquick, and Mexican cheese blend. Mix on low speed until everything is well combined.
- Use a cookie scoop to form the sausage mixture into 1-inch balls. Place the balls onto a parchment-lined baking sheet.
- Bake for 18–20 minutes or until the sausage balls are golden brown and fully cooked.
- Allow the sausage balls to cool for a few minutes, then serve with your favorite dipping sauce, such as salsa or queso.
Notes
- If the mixture is too sticky, resist adding more Bisquick. The mixture should remain sticky to form the balls properly.
- You can freeze the sausage balls uncooked. Bake from frozen by adding a few extra minutes to the cooking time.
- Feel free to swap out the Mexican cheese blend for cheddar, pepper jack, or mozzarella cheese.
- For a lighter version, use turkey sausage instead of regular sausage.
- Store leftover sausage balls in an airtight container in the fridge for up to 3 days.
