  • 1/2 cup low-sodium beef broth

  • 1 teaspoon cumin

Instructions

  1. Heat vegetable oil in a large skillet over medium-high heat. Sear the chuck roast on all sides until browned.
  2. Transfer the seared roast to a 6-quart slow cooker.
  3. Mix chili powder, garlic powder, onion powder, cumin, paprika, salt, and pepper in a small bowl. Rub the seasoning mixture all over the roast.
  4. Add beef broth to the slow cooker.
  5. Cover and cook on low for 8-9 hours, or until the meat is fork-tender.
  6. Once cooked, shred the beef in the slow cooker and mix with the juices.
  7. Finish with a squeeze of fresh lime juice and sprinkle with cilantro.
