Description

Slow Cooker Hawaiian Chicken is a beginner-friendly, sweet and savory pulled chicken dish made with pineapple juice, garlic, and spices—perfect for easy, healthy meals.


Ingredients

  • 3 pounds boneless, skinless chicken breasts
  • 1 cup chopped onion
  • 2 tablespoons butter
  • 1/4 cup all-purpose flour
  • 2 cups pineapple juice
  • 1/2 cup brown sugar
  • 3/4 cup ketchup
  • 1 tablespoon soy sauce
  • 4 garlic cloves, minced
  • 1 1/2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground ginger

Instructions

  1. In a large bowl or measuring cup, whisk together pineapple juice, brown sugar, ketchup, soy sauce, garlic, Worcestershire sauce, and spices until well combined.
  2. In a skillet, melt butter over medium-high heat. Add chopped onion and sauté until softened and beginning to brown.
  3. Stir flour into the onion mixture and cook for 1 minute. Gradually pour in the juice mixture while stirring, then bring to a boil and simmer for 10–15 minutes until thickened.
  4. Place chicken breasts in the bottom of a slow cooker and pour the thickened sauce over them. Cover and cook on low for 8 hours or high for 4 hours.
  5. Once cooked, shred the chicken with two forks directly in the slow cooker and stir well to coat in the sauce.
  6. If the sauce is too thin, prop open the lid for 15–20 minutes to reduce, or let it thicken as it cools before serving.

Notes

  • Use chicken thighs instead of breasts for a juicier result.
  • Substitute cornstarch for flour to make the dish gluten-free.
  • Make the sauce the night before for easier morning prep.
  • Store leftovers in an airtight container for up to 4 days.
