Description

Slow Cooker Shepherd’s Pie is a comforting and easy-to-make dish that features fork-tender beef, hearty vegetables, and a creamy, cheesy mashed potato topping. The slow cooker does all the work, creating a rich, flavorful meal that is perfect for a family dinner.

  • 1 1/2 pounds boneless beef chuck roast, trimmed and cut into 1-inch cubes
  • 3 cloves garlic, minced
  • 4 medium carrots, peeled and cut into 1/4″ slices
  • 8 ounces white mushrooms, cleaned and roughly chopped
  • 1 1/2 cups frozen corn, thawed
  • 3/4 cup low-sodium beef broth
  • 6 tablespoons tomato paste
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 1/2 tablespoons House Seasoning (garlic powder, onion powder, black pepper, salt)
  • 3 tablespoons all-purpose flour
  • 1 1/2 cups frozen peas, thawed
  • Salt and freshly ground black pepper to taste
  • 2 1/2 pounds russet potatoes, peeled and cut into 2-inch pieces
  • 1 teaspoon salt
  • 1 cup milk, warmed
  • 6 tablespoons butter, melted
  • 1 1/2 cups shredded cheddar cheese
  • Salt and freshly ground black pepper to taste

Instructions

  1. Place the beef cubes in a large slow cooker. Add the garlic, carrots, mushrooms, and corn on top.
  2. In a medium bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, oregano, and House Seasoning. Pour the mixture over the beef and vegetables, stirring to combine.
  3. Cover the slow cooker and cook on low for 7 to 9 hours, or on high for 3 ½ to 4 ½ hours, until the beef is tender.
  4. Meanwhile, prepare the mashed potatoes. Bring a pot of salted water to a boil and add the russet potatoes. Simmer until the potatoes are fork-tender (about 15 minutes).
  5. Drain the potatoes and return them to the pot. Add the milk, melted butter, salt, and pepper. Mash the potatoes until smooth.
  6. Skim any excess fat from the surface of the beef and vegetable mixture in the slow cooker.
  7. In a small bowl, mix the flour with a little water to make a smooth paste. Stir the paste into the slow cooker to thicken the gravy.
  8. Add the peas to the beef mixture and adjust the seasoning with salt and pepper.
  9. Mix the shredded cheddar cheese into the mashed potatoes, then spread them evenly over the beef and vegetable mixture.
  10. Cover and cook on high for an additional 15 to 30 minutes, until the gravy has thickened and the mashed potatoes are heated through.

Notes

  • For a quicker version, you can use instant mashed potatoes.
  • Feel free to substitute the beef with lamb for a more traditional Shepherd’s Pie.
  • Store leftovers in the refrigerator for 3-4 days or freeze for up to 2 months.
  • If you prefer a thicker gravy, add more flour or cornstarch mixed with water.
