Ingredients
Scale
- 1 1/2 pounds boneless beef chuck roast, trimmed and cut into 1-inch cubes
- 3 cloves garlic, minced
- 4 medium carrots, peeled and cut into 1/4″ slices
- 8 ounces white mushrooms, cleaned and roughly chopped
- 1 1/2 cups frozen corn, thawed
- 3/4 cup low-sodium beef broth
- 6 tablespoons tomato paste
- 2 teaspoons Worcestershire sauce
- 1 teaspoon dried oregano
- 1 1/2 tablespoons House Seasoning (garlic powder, onion powder, black pepper, salt)
- 3 tablespoons all-purpose flour
- 1 1/2 cups frozen peas, thawed
- Salt and freshly ground black pepper to taste
- 2 1/2 pounds russet potatoes, peeled and cut into 2-inch pieces
- 1 teaspoon salt
- 1 cup milk, warmed
- 6 tablespoons butter, melted
- 1 1/2 cups shredded cheddar cheese
- Salt and freshly ground black pepper to taste
Instructions
- Place the beef cubes in a large slow cooker. Add the garlic, carrots, mushrooms, and corn on top.
- In a medium bowl, whisk together the beef broth, tomato paste, Worcestershire sauce, oregano, and House Seasoning. Pour the mixture over the beef and vegetables, stirring to combine.
- Cover the slow cooker and cook on low for 7 to 9 hours, or on high for 3 ½ to 4 ½ hours, until the beef is tender.
- Meanwhile, prepare the mashed potatoes. Bring a pot of salted water to a boil and add the russet potatoes. Simmer until the potatoes are fork-tender (about 15 minutes).
- Drain the potatoes and return them to the pot. Add the milk, melted butter, salt, and pepper. Mash the potatoes until smooth.
- Skim any excess fat from the surface of the beef and vegetable mixture in the slow cooker.
- In a small bowl, mix the flour with a little water to make a smooth paste. Stir the paste into the slow cooker to thicken the gravy.
- Add the peas to the beef mixture and adjust the seasoning with salt and pepper.
- Mix the shredded cheddar cheese into the mashed potatoes, then spread them evenly over the beef and vegetable mixture.
- Cover and cook on high for an additional 15 to 30 minutes, until the gravy has thickened and the mashed potatoes are heated through.
Notes
- For a quicker version, you can use instant mashed potatoes.
- Feel free to substitute the beef with lamb for a more traditional Shepherd’s Pie.
- Store leftovers in the refrigerator for 3-4 days or freeze for up to 2 months.
- If you prefer a thicker gravy, add more flour or cornstarch mixed with water.
