Description

Ingredients

  • 2 cups water
  • 1 cup black beans (canned, drained and rinsed)
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cherry tomatoes (halved)
  • 1 red bell pepper (diced)
  • 1/4 cup red onion (finely diced)
  • 1 avocado (diced)
  • 1/4 cup fresh cilantro (chopped)
  • 3 tablespoons lime juice (fresh)
  • 2 tablespoons olive oil
  • 2 cloves garlic (minced)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water thoroughly to remove bitterness.
  2. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until water is absorbed.
  3. Remove from heat, fluff with a fork, and allow the quinoa to cool completely.
  4. While the quinoa cools, prepare the vegetables by chopping tomatoes, bell pepper, onion, and cilantro.
  5. In a small bowl, whisk together lime juice, olive oil, garlic, cumin, chili powder, salt, and pepper.
  6. In a large mixing bowl, combine cooled quinoa, black beans, corn, and chopped vegetables.
  7. Pour the dressing over the salad and toss well to combine.
  8. Gently fold in diced avocado just before serving.
  9. Chill for 30 minutes before serving for best flavor.
