Ingredients
Scale
- 12 oz (340 g) spaghetti: classic pasta base that holds the spicy sauce well
- 3 tbsp olive oil: adds richness and carries the flavors
- 4 cloves garlic, minced: provides aromatic depth
- 1 tsp red pepper flakes: delivers the signature spicy heat
- 2 tbsp tomato paste: intensifies tomato flavor
- 28 oz (800 g) canned crushed tomatoes: forms the main sauce base
- 1 tsp salt: enhances overall flavor
- 0.5 tsp black pepper: adds subtle warmth
- 2 tbsp fresh parsley, chopped: adds freshness and color
- 0.25 cup pasta water (as needed): helps loosen and emulsify the sauce
Instructions
- Bring a large pot of salted water to a boil and cook the spaghetti until al dente according to package instructions. Reserve 1/4 cup of pasta water, then drain.
- Heat olive oil in a large skillet over medium heat. Add the minced garlic and cook for about 30 seconds until fragrant, stirring constantly.
- Add the red pepper flakes and stir for another 30 seconds to bloom the spice in the oil.
- Stir in the tomato paste and cook for 1–2 minutes until slightly darkened.
- Add the crushed tomatoes, salt, and black pepper. Stir well and let the sauce simmer gently for about 10 minutes.
- Taste the sauce and adjust seasoning or spice level as needed.
- Add the cooked spaghetti directly to the sauce and toss to coat evenly. Add reserved pasta water as needed to reach desired consistency.
- Remove from heat, sprinkle with fresh parsley, and serve immediately.
Notes
- Adjust red pepper flakes to control the spice level.
- Add a pinch of sugar if the sauce tastes too acidic.
- For extra richness, finish with a drizzle of olive oil before serving.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
