- 2 tomatoes, chopped (about 2 cups)
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 1 teaspoon turmeric
- 1 teaspoon smoked paprika
- 1/4 teaspoon red pepper flakes (optional)
- 4 cups vegetable broth
- 2 cups kale, chopped (about 2 cups packed)
- 1 can (15 oz) kidney beans or garbanzo beans, drained and rinsed
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add the chopped onions and garlic, and sauté for about 3-4 minutes until softened.
- Add chili powder, cumin, turmeric, paprika, and red pepper flakes. Stir to coat the onions and garlic in the spices and cook for another 1-2 minutes.
- Stir in the carrots, celery, zucchini, and tomatoes. Mix well to combine with the spices.
- Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat and simmer for 25-30 minutes, or until the vegetables are tender.
- Add the chopped kale and beans to the pot, and simmer for an additional 5-10 minutes until the kale is tender and the beans are heated through.
- Season with salt and pepper to taste. Serve hot, garnished with fresh herbs or a squeeze of lemon if desired.
Notes
- For a spicier version, add more red pepper flakes or fresh chili peppers.
- This soup can be stored in the fridge for up to 5 days or frozen for up to 3 months.
- If you prefer a creamier texture, add a splash of coconut milk or a dollop of sour cream.
- If you don’t have kale, you can use spinach or another leafy green instead.
