Description

This Spring Orzo Salad is a fresh, vibrant, and satisfying seasonal dish made with tender orzo pasta, roasted asparagus, creamy butter beans, briny olives, artichoke hearts, and fresh herbs, all tossed in a bright honey lemon vinaigrette. Perfect for spring lunches, light dinners, or meal prep, it delivers balanced nutrition, bold Mediterranean flavors, and an easy, crowd-pleasing presentation.

Ingredients

Scale
  • 3/4 cup dry orzo pasta
  • 1 bunch asparagus, trimmed and chopped
  • 1 can butter beans, drained and rinsed
  • 1/2 cup green olives, pitted and chopped
  • 6–7 jarred artichoke hearts, halved
  • 1/2 cup fresh parsley, finely chopped
  • 1/2 cup fresh dill, finely chopped
  • 1/4 cup fresh lemon juice
  • 2 teaspoons lemon zest
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons honey
  • 1 clove garlic, minced or grated
  • 1 teaspoon freshly cracked black pepper
  • Kosher salt, to taste

Instructions

  1. Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. Trim the woody ends from the asparagus, chop into small pieces, toss with olive oil and salt, and spread evenly on the baking sheet. Roast for 20–25 minutes until tender and lightly charred.
  3. Meanwhile, bring a pot of well-salted water to a boil and cook the orzo according to package instructions until al dente. Drain well.
  4. In a large bowl, combine the butter beans, olives, artichoke hearts, parsley, and dill.
  5. Add the cooked orzo and roasted asparagus to the bowl while still warm.
  6. In a small saucepan, whisk together lemon juice, olive oil, honey, lemon zest, garlic, and black pepper. Heat over medium heat until lightly bubbling, then remove from heat.
  7. Pour the warm vinaigrette over the salad and toss until evenly coated. Adjust seasoning with salt as needed.
  8. Let the salad rest for 5–10 minutes before serving to allow flavors to meld.

Notes

  • Use thin-stem asparagus for the most tender texture.
  • Maple syrup can be substituted for honey to make the salad vegan.
  • Cannellini beans can replace butter beans if needed.
  • This salad can be served warm or chilled and stores well for up to 3 days.
