  • 12 oz fresh strawberries, hulled and finely diced

  • 2 3/4 cups all-purpose flour, spooned and leveled
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 cup granulated white sugar
  • 1 cup unsalted butter, very softened
  • 1 egg, at room temperature
  • 2 tsp vanilla extract
  • 1/4 cup granulated white sugar, for rolling dough in

Instructions

  1. Prepare the cheesecake filling by mixing cold cream cheese, sugar, and vanilla extract until smooth and fluffy. Freeze in small discs on parchment paper.
  2. Make the strawberry jam by cooking diced strawberries with sugar over medium heat for 45 minutes, smashing them halfway through. Allow the jam to cool.
  3. Preheat oven to 350°F (175°C) and prepare dry ingredients (flour, baking powder, baking soda, salt) in a bowl.
  4. Cream butter and sugar until fluffy, then beat in the egg and vanilla extract until pale and airy.
  5. Mix dry ingredients into the wet mixture until just combined, avoiding overmixing.
  6. Layer dough and strawberry jam in the bowl, folding them lightly to create pockets of jam without fully mixing them.
  7. Scoop dough portions, flatten them, and place a frozen cheesecake disc in the center. Wrap dough around the cheesecake and shape into discs. Roll in sugar for a sparkling finish.
  8. Bake cookies for 11–12 minutes, then gently press around the cookies with a circular cutter to perfect their shape while still warm.
