Instructions
- Prepare the cheesecake filling by mixing cold cream cheese, sugar, and vanilla extract until smooth and fluffy. Freeze in small discs on parchment paper.
- Make the strawberry jam by cooking diced strawberries with sugar over medium heat for 45 minutes, smashing them halfway through. Allow the jam to cool.
- Preheat oven to 350°F (175°C) and prepare dry ingredients (flour, baking powder, baking soda, salt) in a bowl.
- Cream butter and sugar until fluffy, then beat in the egg and vanilla extract until pale and airy.
- Mix dry ingredients into the wet mixture until just combined, avoiding overmixing.
- Layer dough and strawberry jam in the bowl, folding them lightly to create pockets of jam without fully mixing them.
- Scoop dough portions, flatten them, and place a frozen cheesecake disc in the center. Wrap dough around the cheesecake and shape into discs. Roll in sugar for a sparkling finish.
- Bake cookies for 11–12 minutes, then gently press around the cookies with a circular cutter to perfect their shape while still warm.
