Instructions
- Preheat the oven to 425°F (220°C) and line a large baking sheet with parchment paper.
- In a saucepan over medium-high heat, combine the water, butter, and salt. Bring to a rolling boil until the butter is fully melted.
- Add the flour all at once and stir vigorously until a smooth dough forms and pulls away from the sides of the pan, about 1 minute.
- Transfer the dough to a mixing bowl and let it cool for 10 to 15 minutes until warm but not hot.
- Add the eggs one at a time, mixing well after each addition until the dough becomes smooth and glossy.
- Transfer the dough to a piping bag and pipe mounds onto the prepared baking sheet, spacing them 1 inch apart.
- Bake at 425°F (220°C) for 10 minutes, then reduce the temperature to 350°F (175°C) and bake for 30 to 35 minutes until deep golden brown. Do not open the oven door during baking.
- Remove from the oven and cool completely on the baking sheet.
- In a mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
- Add the chilled heavy cream and whip on medium-high speed until thick and fluffy.
- Fold in the diced strawberries gently with a spatula.
- Slice each cooled pastry shell in half using a serrated knife.
- Pipe a generous amount of strawberry cream filling into each shell and replace the tops.
- Garnish with sliced strawberries and dust with powdered sugar before serving. Refrigerate until ready to enjoy.
