Description

These strawberry turnovers are the perfect balance of sweetness and flakiness. Filled with fresh strawberries and wrapped in buttery puff pastry, they make for a delicious breakfast, dessert, or snack.

  • 1 sheet of Puff Pastry: Buttery, flaky pastry forms the base of this turnover.
  • 1 ½ cups Fresh Strawberries (chopped): The star of the filling, adding sweetness and flavor.
  • ¼ cup Sugar: Enhances the natural sweetness of the strawberries.
  • 1 tbsp Lemon Juice: Adds a touch of tang to brighten the flavor.
  • 1 tbsp Cornstarch: Thickens the filling to prevent it from becoming too runny.
  • 1 Egg (for egg wash): Gives the turnovers a golden, shiny finish.

Instructions

  1. Prepare the filling: In a medium saucepan, combine chopped fresh strawberries, sugar, lemon juice, and cornstarch. Cook over medium heat for 5-7 minutes, stirring until the mixture thickens. Remove from heat and allow to cool.
  2. Preheat the oven to 375°F (190°C).
  3. Roll out the puff pastry on a lightly floured surface, then cut into squares (about 4 inches each).
  4. Place a spoonful of the cooled strawberry filling in the center of each pastry square.
  5. Fold the pastry into a triangle shape, sealing the edges by pressing down and crimping with a fork.
  6. Brush the top of each turnover with a beaten egg wash.
  7. Place the turnovers on a parchment-lined baking sheet and bake for 20-25 minutes, or until golden brown and puffed up.
  8. Let the turnovers cool for a few minutes before serving.

Notes

  • Ensure the strawberry filling is cool before filling the pastry to prevent sogginess.
  • For a dairy-free version, use vegan puff pastry and substitute the egg wash with non-dairy milk.
  • If you don’t have fresh strawberries, you can use frozen strawberries, but make sure to thaw and drain them.
  • These turnovers can be made ahead and frozen before baking. Just bake from frozen, adding a few extra minutes to the bake time.
