Description

These Strawberry Watermelon Popsicles are a refreshing homemade summer treat made with fresh watermelon, strawberries, lemon juice, and optional natural sweetener. Naturally sweet, easy to prepare, and perfect for hot days, these fruity popsicles are loved by both kids and adults.


Ingredients

  • 4 cups seedless watermelon, cubed
  • 2 cups fresh strawberries, hulled
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons honey or maple syrup (optional, adjust to taste)
  • 24 tablespoons water, if needed for blending
  • 1 tablespoon fresh mint, finely chopped (optional)

Instructions

  1. Wash and hull the strawberries. Cut larger berries in half if needed.
  2. Remove the rind from the watermelon and cut the flesh into cubes.
  3. Add the watermelon cubes to a blender and blend until smooth.
  4. Add the strawberries and lemon juice to the blender. Blend again until completely smooth.
  5. If desired, add honey or maple syrup and blend briefly. Add water only if necessary to help blending.
  6. Taste the mixture and adjust sweetness if needed.
  7. Pour the fruit mixture evenly into popsicle molds, leaving a little room at the top.
  8. Insert popsicle sticks according to the mold instructions.
  9. Freeze for 4 to 6 hours or until completely firm, preferably overnight.
  10. To serve, run warm water over the outside of the molds for a few seconds and gently remove the popsicles.

Notes

  • Use ripe, sweet fruit for the best flavor.
  • Additional sweetener may not be necessary if the fruit is naturally sweet.
  • For creamier popsicles, blend in 1/2 cup Greek yogurt or coconut milk.
  • Store unmolded popsicles in an airtight freezer container for up to 2 months.
  • Avoid adding too much water, as it can make the popsicles icy.
  • Fresh mint can be added for extra freshness and flavor.
