Description
Stuffed Pepper Carrots are a fun and easy appetizer made with mini orange sweet peppers filled with a creamy dill and ranch cream cheese mixture. Designed to look like small carrots with fresh dill tops, this quick no-cook recipe is perfect for Easter gatherings, spring parties, and healthy snack platters.
Ingredients
Scale
- 4 mini orange sweet peppers, sliced lengthwise
- 4 oz cream cheese, softened
- 3 tablespoons sour cream
- 1 tablespoon chopped fresh dill
- 1/2 teaspoon ranch seasoning
- 1 bunch fresh dill sprigs (for garnish)
Instructions
- Wash and dry the mini orange peppers thoroughly. Slice each pepper lengthwise to create carrot-shaped halves.
- Remove the seeds and inner membranes from each pepper half using a small spoon or knife.
- In a small mixing bowl, combine the softened cream cheese and sour cream. Stir until smooth and creamy.
- Add chopped dill and ranch seasoning to the mixture and mix until well combined.
- Spoon or pipe the cream cheese filling evenly into each pepper half.
- Insert a small sprig of fresh dill at the top of each filled pepper to resemble carrot greens.
- Arrange the stuffed pepper carrots on a serving platter and serve immediately or refrigerate until ready to serve.
Notes
- Allow the cream cheese to soften at room temperature before mixing for a smoother filling.
- You can substitute Greek yogurt for sour cream for a lighter option.
- If fresh dill is unavailable, dried dill can be used in the filling.
- For a shortcut, a prepared vegetable dip can replace the homemade cream cheese mixture.
- These stuffed pepper carrots can be prepared up to one day in advance and stored covered in the refrigerator.
