  • 1 tablespoon minced garlic
  • 1/3 cup chopped fresh spinach
  • 1/3 cup chopped bacon (or bacon bits)
  • 1/2 teaspoon salt
  • 1/2 teaspoon cracked black pepper
  • 1 tablespoon finely chopped parsley
  • 1 teaspoon finely chopped rosemary
  • 1 teaspoon finely chopped thyme
  • 2 tablespoons butter (melted)
  • 1 tablespoon chopped fresh herbs (parsley, rosemary, thyme)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon cracked black pepper
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 400°F (200°C) and grease a small sheet pan or roasting dish.
  2. Place the turkey breast in a Ziplock bag or between two pieces of plastic wrap and pound it to a 1/4-inch thickness.
  3. In a medium bowl, combine cream cheese, garlic, spinach, bacon, salt, pepper, parsley, rosemary, and thyme. Mix until well combined.
  4. Spread the mixture over the top of the pounded turkey, leaving a half-inch border around the edges.
  5. Roll the turkey breast tightly from one long side to the other and secure the ends with toothpicks or baker’s twine.
  6. In a small bowl, mix garlic powder, smoked paprika, pepper, and salt. Rub this spice mixture over the rolled turkey.
  7. Place the stuffed turkey breast in the oven and bake for 15-25 minutes, depending on the thickness. Use a meat thermometer to check for an internal temperature of 160°F (71°C).
  8. Switch the oven to broil for 5 more minutes to brown the outside.
  9. Remove the turkey from the oven and let it rest for 5-10 minutes. Brush with melted butter and fresh herbs before slicing and serving.
