Instructions
- Preheat the oven to 400°F (200°C) and grease a small sheet pan or roasting dish.
- Place the turkey breast in a Ziplock bag or between two pieces of plastic wrap and pound it to a 1/4-inch thickness.
- In a medium bowl, combine cream cheese, garlic, spinach, bacon, salt, pepper, parsley, rosemary, and thyme. Mix until well combined.
- Spread the mixture over the top of the pounded turkey, leaving a half-inch border around the edges.
- Roll the turkey breast tightly from one long side to the other and secure the ends with toothpicks or baker’s twine.
- In a small bowl, mix garlic powder, smoked paprika, pepper, and salt. Rub this spice mixture over the rolled turkey.
- Place the stuffed turkey breast in the oven and bake for 15-25 minutes, depending on the thickness. Use a meat thermometer to check for an internal temperature of 160°F (71°C).
- Switch the oven to broil for 5 more minutes to brown the outside.
- Remove the turkey from the oven and let it rest for 5-10 minutes. Brush with melted butter and fresh herbs before slicing and serving.
