- 1 1/4 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed
- 1/4 cup ice water
- 2 cups mixed berries (strawberries, blueberries, raspberries, etc.)
- 1/4 cup granulated sugar
- 1 tablespoon cornstarch
- 1 tablespoon lemon juice
- 1 egg (for egg wash)
- 1 tablespoon water (for egg wash)
Instructions
- In a large bowl, combine the flour and salt. Add the cold, cubed butter and cut it into the flour using a pastry cutter or your hands until the mixture resembles coarse crumbs.
- Gradually add ice water, 1 tablespoon at a time, until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- Meanwhile, prepare the berry filling by mixing the berries, sugar, cornstarch, and lemon juice in a bowl. Stir gently to coat the berries evenly.
- Preheat the oven to 375°F (190°C). On a lightly floured surface, roll out the dough into a 1/8-inch thick circle. Cut out 6-inch rounds of dough.
- Place the berry filling in the center of each dough round, leaving a 1-inch border. Gently fold the edges of the dough over the filling, pleating the dough as you go.
- In a small bowl, whisk together the egg and water to make the egg wash. Brush the edges of the galettes with the egg wash.
- Place the galettes on a baking sheet lined with parchment paper and bake for 25-30 minutes, or until the crust is golden and the berries are bubbling.
- Let the galettes cool for a few minutes before serving.
Notes
- For flakier dough, handle it as little as possible and keep it cold before baking.
- You can substitute whole wheat flour for all-purpose flour for a more rustic flavor.
- If using frozen berries, make sure to thaw and drain them to prevent a watery filling.
- Store leftover galettes in an airtight container at room temperature for up to 2 days.
