Description

Summer Berry Mini Galettes are a delightful and rustic dessert made with a buttery, flaky crust and filled with a sweet and tangy berry mixture. They’re perfect for any occasion, whether you’re entertaining or enjoying a simple dessert at home.


Ingredients

  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup ice water
  • 2 cups mixed berries (strawberries, blueberries, raspberries, etc.)
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice
  • 1 egg (for egg wash)
  • 1 tablespoon water (for egg wash)

Instructions

  1. In a large bowl, combine the flour and salt. Add the cold, cubed butter and cut it into the flour using a pastry cutter or your hands until the mixture resembles coarse crumbs.
  2. Gradually add ice water, 1 tablespoon at a time, until the dough comes together. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  3. Meanwhile, prepare the berry filling by mixing the berries, sugar, cornstarch, and lemon juice in a bowl. Stir gently to coat the berries evenly.
  4. Preheat the oven to 375°F (190°C). On a lightly floured surface, roll out the dough into a 1/8-inch thick circle. Cut out 6-inch rounds of dough.
  5. Place the berry filling in the center of each dough round, leaving a 1-inch border. Gently fold the edges of the dough over the filling, pleating the dough as you go.
  6. In a small bowl, whisk together the egg and water to make the egg wash. Brush the edges of the galettes with the egg wash.
  7. Place the galettes on a baking sheet lined with parchment paper and bake for 25-30 minutes, or until the crust is golden and the berries are bubbling.
  8. Let the galettes cool for a few minutes before serving.

Notes

  • For flakier dough, handle it as little as possible and keep it cold before baking.
  • You can substitute whole wheat flour for all-purpose flour for a more rustic flavor.
  • If using frozen berries, make sure to thaw and drain them to prevent a watery filling.
  • Store leftover galettes in an airtight container at room temperature for up to 2 days.
