- 2 cups cherry tomatoes, halved
- 2 large tomatoes, diced
- 1 cucumber, diced
- 1 small shallot, thinly sliced
- 1/3 cup crumbled feta cheese
- 1/4 cup fresh basil, chopped
- 3 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 1 teaspoon honey
- Salt, to taste
- Black pepper, to taste
- 1 avocado, diced (optional)
Instructions
- Wash and dry all fruits and vegetables thoroughly.
- Chop the peaches into bite-sized pieces, removing the pits.
- Dice the large tomatoes and halve the cherry tomatoes.
- Peel and dice the cucumber into small cubes.
- Thinly slice the shallot.
- In a large bowl, combine peaches, tomatoes, cucumber, and shallots.
- In a small bowl, whisk together olive oil, lemon juice, honey, salt, and pepper.
- Pour the dressing over the salad and gently toss to combine.
- Top with crumbled feta cheese and chopped fresh basil.
- Let sit for 5–10 minutes before serving for best flavor.
