Sweet Hawaiian Crockpot Chicken is an easy, tropical-inspired slow cooker recipe made with tender chicken, pineapple chunks, soy sauce, and a sweet-savory sauce. Perfect for busy weeknights or meal prep, this dish is both flavorful and family-friendly.
Ingredients
Scale
- ½ pound boneless skinless chicken breasts, cubed
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 teaspoon tomato paste
- 1 teaspoon Worcestershire sauce
- ¼ teaspoon garlic powder
- ½ teaspoon brown sugar
- Black pepper to taste
- 1 red bell pepper, diced
- 8 ounces canned pineapple chunks with juice
- Scallions for garnish (optional)
- Rice for serving (optional)
Instructions
- Add soy sauce, tomato paste, Worcestershire sauce, garlic powder, brown sugar, and black pepper to the Crockpot and mix well.
- Add cubed chicken breasts, diced red bell pepper, and the can of pineapple chunks with juice.
- Gently stir to coat the chicken and peppers in the sauce.
- Cover and cook on low for 4–6 hours or high for 2–3 hours.
- About 30 minutes before serving, taste the sauce and adjust seasoning as needed (e.g., more soy sauce or brown sugar).
- Optionally garnish with scallions and serve hot over rice or your choice of base.
Notes
- Cooking on low is ideal for better flavor and tender texture.
- Don’t open the Crockpot lid while cooking—heat loss increases cook time.
- Use a cornstarch slurry if you prefer a thicker sauce.
- Store leftovers in an airtight container for up to 4 days, or freeze for up to 3 months.
