Description

  • 5 sweet potatoes, peeled and cut into chunks
  • 2 eggs
  • 1/2 cup butter, melted
  • 1/2 cup milk
  • 2 tsp pumpkin pie spice
  • 1/2 cup brown sugar
  • 1/2 cup brown sugar (for topping)
  • 1/2 cup all-purpose flour
  • 1 cup pecans, chopped
  • 1/4 cup butter, melted (for topping)
  • 5 cups miniature marshmallows

Instructions

  1. Boil sweet potato chunks in a large saucepan for 20 minutes, or until fork-tender. Drain and mash the potatoes.
  2. Preheat oven to 350°F (175°C). Coat a 9×13-inch baking dish with cooking spray. Add the eggs, melted butter, milk, brown sugar, and pumpkin pie spice to the mashed sweet potatoes. Mix until smooth and spread evenly in the baking dish.
  3. In a separate bowl, combine brown sugar, flour, chopped pecans, and melted butter for the topping. Stir until mixed well.
  4. Spread the pecan topping evenly over the sweet potato mixture.
  5. Bake in the preheated oven for 25 minutes. Five minutes before the end of baking, add the marshmallows on top and bake until golden and bubbly.

Notes

  • Make ahead: You can prepare the casserole up to two days in advance without the marshmallows. Add marshmallows just before baking.
  • Freezing: The casserole can be frozen (without marshmallows) for up to 4 months. Thaw before baking and add marshmallows during the last few minutes.
  • For a nut-free version, substitute pecans with crushed pretzels or omit them altogether.
  • If you prefer a less sweet casserole, reduce the amount of brown sugar or swap it for maple syrup or honey.
