Description

These sweet potato muffins are naturally sweet, moist, and packed with nutrients. The perfect healthy alternative to traditional muffins, they’re easy to make, freezer-friendly, and bursting with flavor from the sweet potatoes and cinnamon.


Ingredients

  • 3 cups mashed sweet potatoes
  • 2 cups flour
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • ¼ teaspoon baking powder
  • ½ teaspoon salt
  • 1 cup sugar
  • ¾ cup vegetable oil
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup ground flaxseed meal (optional)

Instructions

  1. Preheat your oven to 400°F. Pierce your sweet potatoes with a fork and bake them on a foil-lined baking sheet for 45 minutes or until soft. Let them cool, peel, and mash until smooth, making about 3 cups of mashed sweet potato.
  2. In a large bowl, combine the flour, cinnamon, baking soda, baking powder, and salt.
  3. In a separate bowl, whisk together the sugar, vegetable oil, eggs, and vanilla extract.
  4. Stir the wet ingredients into the dry ingredients, then fold in the mashed sweet potatoes until fully incorporated.
  5. Spoon the batter into a muffin tin lined with paper liners, filling each cup about three-quarters full.
  6. If using, sprinkle ground flaxseed on top of the batter for added texture and nutrition.
  7. Bake at 325°F for 25–30 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool in the pan for a few minutes before transferring to a wire rack to cool completely.
