Description

This Sweet Potato Taco Bowl is a vibrant and satisfying meal made with roasted sweet potatoes, seasoned taco beef, fresh pico de gallo, creamy guacamole, and a cool touch of sour cream. It’s the perfect balance of smoky, spicy, sweet, and creamy flavors, all packed into one bowl.


Ingredients

  • 1 large sweet potato, peeled and cubed
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and pepper, to taste
  • 1/2 lb ground beef (or turkey/lentils)
  • 1 tbsp taco seasoning
  • 2 tbsp water
  • 1/2 cup pico de gallo
  • 1/4 cup guacamole
  • 2 tbsp sour cream (or dairy-free alternative)
  • Cilantro and lime wedges for garnish (optional)

Instructions

  1. Preheat the oven to 425°F (220°C). Toss the cubed sweet potatoes with olive oil, salt, pepper, and smoked paprika. Spread them in a single layer on a baking sheet.
  2. Roast the sweet potatoes for 15 minutes, flip them, and then roast for another 10-15 minutes until golden and tender with crispy edges.
  3. While the sweet potatoes roast, brown the ground beef in a skillet over medium heat. Once cooked, drain any excess fat, then add taco seasoning and water. Simmer for 2-3 minutes.
  4. Assemble the bowls by adding a layer of roasted sweet potatoes at the bottom. Top with taco beef, then spoon on pico de gallo, guacamole, and sour cream. Garnish with cilantro and lime wedges if desired.

Notes

  • For a vegetarian option, swap the ground beef for black beans, lentils, or plant-based crumbles.
  • Make sure the sweet potatoes are spread out on the pan to ensure they crisp up.
