  • 1 can Black beans (15 oz, drained and rinsed): Offer additional protein.
  • 1 cup Corn (frozen or canned): Adds sweetness and crunch.
  • 4 cups Chicken broth: Creates a hearty base.
  • Optional toppings: Sour cream, shredded cheese, cilantro, jalapeños.

Instructions

  1. Brown the ground beef in a large pot over medium heat. Drain excess fat.
  2. Add chopped onion, bell peppers, and garlic. Cook until vegetables are soft, about 5 minutes.
  3. Stir in taco seasoning and cook for 1-2 minutes to release flavors.
  4. Add tomatoes, beans, corn, and chicken broth to the pot. Stir well.
  5. Bring to a boil, then reduce heat and simmer for 20-30 minutes.
  6. Adjust seasoning to taste, adding more taco seasoning or salt if necessary.
  7. Serve hot with your favorite toppings like sour cream and cheese.

Notes

  • For a spicier version, add jalapeños or cayenne pepper.
  • To make it vegetarian, omit the ground beef and use more beans or lentils.
