Instructions
- In a large pot, heat butter over medium heat. Add the diced onion and sauté until soft and translucent, about 5-7 minutes.
- Stir in the minced garlic and cook for another 30 seconds until fragrant.
- Add the crushed tomatoes and tomato paste, stir to combine, and cook for 10 minutes.
- Pour in the vegetable broth and bring the mixture to a simmer. Let it cook for 15-20 minutes.
- Use an immersion blender to blend the soup until smooth, or transfer to a regular blender in batches.
- Return the soup to the pot, stir in the heavy cream, and season with salt, pepper, and fresh basil or Italian herbs. Simmer for 5 more minutes.
- Serve hot, garnished with additional basil or croutons, if desired.
