- 1 ½ cups blueberries
- 1 ½ cups raspberries
- ¾ cup granulated sugar
- ¼ cup brown sugar
- ¼ cup cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1 teaspoon vanilla extract
- 1 double pie crust (top and bottom)
- 1 egg (for egg wash)
- 1 tablespoon coarse sugar (optional)
Instructions
- In a large bowl, combine strawberries, blueberries, and raspberries with granulated sugar, brown sugar, cornstarch, lemon juice, lemon zest, and vanilla extract. Mix gently and let sit for 10–15 minutes.
- Preheat oven to 400°F (200°C). Roll out one pie crust and place it into a 9-inch pie dish.
- Pour the berry mixture into the crust, spreading evenly.
- Roll out the second crust and place it over the filling or create a lattice top. Trim and crimp edges to seal.
- Brush the top crust with beaten egg and sprinkle with coarse sugar.
- Place pie on a baking sheet and bake for 20 minutes. Reduce heat to 350°F (175°C) and bake for another 30–40 minutes until golden and bubbling.
- Remove from oven and allow the pie to cool for at least 3 hours before slicing.

- Let the filling rest before baking to enhance flavor and texture.
- Use frozen berries if fresh are unavailable, but thaw and drain well.
- Cover crust edges with foil if they brown too quickly.
