Description

Ingredients

  • 2 ½ cups strawberries, hulled and halved
  • 1 ½ cups blueberries
  • 1 ½ cups raspberries
  • ¾ cup granulated sugar
  • ¼ cup brown sugar
  • ¼ cup cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 double pie crust (top and bottom)
  • 1 egg (for egg wash)
  • 1 tablespoon coarse sugar (optional)

Instructions

  1. In a large bowl, combine strawberries, blueberries, and raspberries with granulated sugar, brown sugar, cornstarch, lemon juice, lemon zest, and vanilla extract. Mix gently and let sit for 10–15 minutes.
  2. Preheat oven to 400°F (200°C). Roll out one pie crust and place it into a 9-inch pie dish.
  3. Pour the berry mixture into the crust, spreading evenly.
  4. Roll out the second crust and place it over the filling or create a lattice top. Trim and crimp edges to seal.
  5. Brush the top crust with beaten egg and sprinkle with coarse sugar.
  6. Place pie on a baking sheet and bake for 20 minutes. Reduce heat to 350°F (175°C) and bake for another 30–40 minutes until golden and bubbling.
  7. Remove from oven and allow the pie to cool for at least 3 hours before slicing.

  • Let the filling rest before baking to enhance flavor and texture.
  • Use frozen berries if fresh are unavailable, but thaw and drain well.
  • Cover crust edges with foil if they brown too quickly.
  • Cooling the pie fully is essential for a properly set filling.
