Description

Turkey Cranberry Pasta Salad is a refreshing and delicious dish that combines leftover turkey, tangy cranberries, and crunchy vegetables with a creamy poppy seed dressing. Perfect for holiday leftovers or as a light meal, this salad is easy to prepare and packed with flavor.

Ingredients

  • Bowtie Pasta
  • Cooked Chopped Turkey
  • Diced Celery
  • Dried Cranberries
  • Chopped Toasted Pecans or Almonds
  • Green Onions
  • Poppy Seed Dressing
  • Mayonnaise
  • Apple Cider Vinegar
  • Granulated Sugar (optional)

Instructions

  1. Toast the almonds in a small pan over medium heat until lightly browned, then set aside to cool.
  2. Cook the pasta according to package directions, ensuring it is al dente. Drain and let cool.
  3. In a small bowl, combine the poppy seed dressing, mayonnaise, apple cider vinegar, and optional sugar. Stir until smooth.
  4. In a large bowl, combine the cooled pasta, turkey, celery, cranberries, toasted nuts, and green onions.
  5. Pour the dressing over the salad and toss everything together to coat evenly.
  6. Cover and refrigerate for at least 1 hour before serving.
  7. Serve chilled and enjoy!

Notes

  • Make sure the pasta has cooled before adding the dressing to prevent it from becoming soggy.
  • Toast the nuts for extra flavor.
  • Feel free to adjust the sweetness by adding more sugar to taste.
  • Use Greek yogurt instead of mayonnaise for a lighter version.
  • This salad can be stored in the refrigerator for up to 3 days.
