Instructions
- Prepare the turkey by removing the neck and giblets.
- In a small saucepan, melt the butter, then add chicken stock, lemon juice, salt, black and white pepper, and onion powder. Stir over low heat until the butter melts and let it cool for 15-20 minutes.
- Using a meat injector, inject the marinade into the thickest parts of the turkey, such as the breasts, thighs, and legs.
- Marinate the turkey for at least 2 hours or up to 24 hours for the best flavor infusion.
- Rest the turkey at room temperature for 30-60 minutes before roasting.
- Proceed with roasting the turkey as desired, ensuring the internal temperature reaches 160°F before resting.

- Let the turkey marinate for at least 12-24 hours for optimal flavor.
- If you don’t have a meat injector, you can use a metal skewer to poke holes in the turkey and let the marinade soak overnight in a bag.
