Description

Vanilla Bean Yogurt Nectarine Parfaits with Candied Nuts are a refreshing layered treat made with creamy vanilla bean yogurt, ripe nectarines, and crunchy homemade candied nuts. Perfect for breakfast, brunch, snacks, or a light summer dessert, these parfaits offer a delicious balance of sweet fruit, rich yogurt, and caramelized nutty crunch.


Ingredients

  • 2 cups vanilla bean yogurt
  • 3 medium ripe nectarines, thinly sliced (about 2 cups)
  • 1 cup pecan halves or mixed nuts
  • 2 tablespoons unsalted butter
  • 3 tablespoons granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/8 teaspoon salt
  • 1 tablespoon honey or maple syrup (optional)
  • 1 tablespoon fresh mint leaves, chopped (optional garnish)

Instructions

  1. Melt 2 tablespoons of butter in a skillet over medium heat.
  2. Add 3 tablespoons of sugar and 1/8 teaspoon salt, stirring until dissolved and glossy.
  3. Add 1 cup of nuts and cook for 3 to 5 minutes, stirring constantly until coated and lightly caramelized.
  4. Transfer the candied nuts to parchment paper and allow them to cool completely.
  5. Wash and slice the 3 nectarines into thin wedges or bite-sized pieces.
  6. Stir 1 teaspoon vanilla extract and optional honey into the yogurt if desired.
  7. Spoon about 1/4 cup yogurt into the bottom of each serving glass or jar.
  8. Add a layer of nectarine slices over the yogurt.
  9. Sprinkle a portion of the cooled candied nuts over the fruit.
  10. Repeat the layers until the glasses are nearly full.
  11. Finish with a final layer of yogurt, nectarine slices, and extra candied nuts.
  12. Garnish with fresh mint if desired and serve immediately or chill for up to 1 hour before serving.

Notes

  • Use ripe but firm nectarines for the best texture and appearance.
  • Allow the candied nuts to cool completely before assembling the parfaits.
  • Greek yogurt can replace regular vanilla yogurt for a thicker texture and higher protein content.
  • Peaches, apricots, or plums can be substituted for nectarines.
