  • 2 (15-ounce) cans black beans, drained and rinsed
  • 1 (28-ounce) can diced tomatoes
  • 2 cups vegetable broth
  • 1 cup corn kernels (optional)
  • 1 tablespoon lime juice (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and cook for 4–5 minutes until soft and translucent.
  2. Add minced garlic and sauté for 1 minute until fragrant.
  3. Stir in chopped bell peppers and jalapeño, cooking for 3–4 minutes until slightly tender.
  4. Add tomato paste and cook for 1–2 minutes, stirring to coat the vegetables.
  5. Mix in chili powder, cumin, smoked paprika, oregano, salt, and pepper. Stir well to bloom the spices.
  6. Pour in diced tomatoes and vegetable broth, stirring to combine.
  7. Add black beans and corn, then bring the mixture to a gentle simmer.
  8. Reduce heat to low and simmer uncovered for 20–30 minutes, stirring occasionally.
  9. Taste and adjust seasoning, adding lime juice if desired for brightness.
  10. Serve hot with your favorite toppings and enjoy.

Notes

  • For a thicker chili, mash some of the black beans before adding them.
