Instructions
- Sauté onion, garlic, and salt in a drizzle of oil or vegetable broth until soft and slightly caramelized, about 5 minutes.
- Add chopped tomatoes, red bell pepper, chili powder, cumin, and chipotle pepper. Cook until tomatoes release their juices and mixture begins to brown, about 7–8 minutes.
- Carefully transfer mixture to a blender and pulse until smooth to create the soup base.
- In a pot, add black beans, shredded jackfruit, and corn. Cook until jackfruit is lightly browned, about 5 minutes.
- Pour the blended tomato mixture back into the pot and stir in vegetable broth. Simmer for 15 minutes until heated through and slightly thickened.
- Ladle soup into bowls and top with tortilla strips, avocado, cilantro, lime wedges, and any other preferred toppings.
