- 1 yellow onion, diced

- 2 carrots, sliced
- 1 cup corn
- 1 cup peas
- 1 cup green beans, chopped
- 2 vine tomatoes, diced
- 4 cups chicken broth
- 2 cups V-8 juice
Instructions
- In a large stockpot, heat olive oil over medium heat. Add the diced onion, celery, and minced garlic. Sauté for 4-5 minutes until the onion is translucent.
- Stir in the diced potatoes, sliced carrots, corn, peas, green beans, and diced tomatoes.
- Add the chicken broth and V-8 juice. Bring the mixture to a boil.
- Reduce the heat to a simmer and cook for 30 minutes, or until the vegetables are tender.

Notes
- For a thicker soup, you can use an immersion blender to blend part of the soup.
