Description

This Vegetarian Lentil Taco Meat is a hearty, flavor-packed meatless taco filling made with French green lentils, toasted walnuts, vegetables, and bold Tex-Mex seasonings. Perfect for tacos, burritos, quesadillas, and taco salads, it’s a satisfying plant-based alternative that even meat lovers enjoy.

  • 1/2 cup finely chopped walnuts
  • 1 tablespoon olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 1 medium green bell pepper, diced (about 1 cup)
  • 2 medium garlic cloves, minced (about 2 teaspoons)
  • 2 tablespoons tomato paste
  • 2 tablespoons taco seasoning
  • 3/4 cup French green lentils, rinsed
  • 3 cups low-sodium vegetable broth, plus up to 1 additional cup if needed
  • 1/2 teaspoon kosher salt, plus more to taste
  • 1/4 teaspoon freshly ground black pepper, plus more to taste
  • Juice of 1/2 lime (about 1 tablespoon)

Instructions

  1. Set a large saute pan over medium-low heat. Add 1/2 cup finely chopped walnuts and toast them, stirring frequently, for 4 to 5 minutes until lightly golden and fragrant. Transfer the walnuts to a bowl and carefully wipe out the pan.
  2. Return the pan to the heat and add 1 tablespoon olive oil. Once hot, add 1 medium diced yellow onion and 1 medium diced green bell pepper. Saute for about 8 minutes, stirring occasionally, until softened and tender.
  3. Stir in 2 minced garlic cloves, 2 tablespoons tomato paste, and 2 tablespoons taco seasoning. Cook for 1 minute, stirring constantly, until fragrant.
  4. Pour in 3 cups low-sodium vegetable broth, scraping up any browned bits from the bottom of the pan. Stir in 3/4 cup rinsed French green lentils.
  5. Bring the mixture to a boil over high heat. Reduce the heat to low and simmer for about 25 minutes, stirring occasionally, until the lentils are tender. Add up to 1 additional cup of vegetable broth if the mixture becomes too dry before the lentils finish cooking.
  6. Stir the toasted walnuts back into the pan. Season with 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper.
  7. Squeeze the juice of 1/2 lime (about 1 tablespoon) over the mixture and stir well. Taste and adjust the seasoning if necessary.
  8. Serve warm in tacos, burritos, quesadillas, taco salads, rice bowls, or other favorite dishes.

Notes

  • French green lentils are recommended because they retain their shape and provide a meatier texture.
  • Brown lentils can be substituted but may result in a softer consistency.
  • For extra heat, add 1/4 to 1/2 teaspoon cayenne pepper, crushed red pepper flakes, or a few dashes of hot sauce.
  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freeze cooled portions in freezer-safe containers for up to 3 months.
  • Add a splash of vegetable broth when reheating if the mixture becomes too thick.
  • If taco seasoning is unavailable, substitute with 2 teaspoons chili powder, 1/2 teaspoon cumin, 1/2 teaspoon onion powder, 1/2 teaspoon oregano, 1/2 teaspoon smoked paprika, 1/2 teaspoon garlic powder, and 1/2 teaspoon salt.
