Walking Taco Casserole is a delicious twist on a classic walking taco, perfect for busy weeknights or casual gatherings. It combines seasoned ground beef, creamy sour cream, beans, and Fritos for a hearty, flavorful dish that’s easy to make and fun to serve.

- 1 pound ground beef
- 1 small onion, chopped finely
- 1 package taco seasoning
- ½ cup water
- 1 can black beans (15 ounces), drained and rinsed
- 1 can diced tomatoes with green chiles (10 ounces)
- ½ cup sour cream
- 1 bag Fritos corn chips (9.25 ounces)
- 2 cups Mexican-style shredded cheese
- Toppings: Green onions, sour cream, guacamole, salsa, jalapenos
Instructions
- Preheat oven to 350°F (175°C) and spray a 13×9-inch baking dish with nonstick cooking spray.
- In a large skillet, brown ground beef over medium heat until almost cooked through. Add chopped onions and cook until softened, about 3-4 minutes.
- Add taco seasoning and water, stirring until evenly coated. Bring to a simmer, then stir in black beans, diced tomatoes with green chiles, and sour cream. Let simmer for 8-10 minutes until heated and slightly thickened.
- Layer Fritos at the bottom of the prepared baking dish, followed by half of the shredded cheese. Spoon the beef mixture over the top, and finish by adding the remaining cheese.
- Cover with foil and bake for 15 minutes. Remove the foil and bake for an additional 5 minutes until the cheese is melted and bubbly.
- Top with more Fritos and your choice of toppings like green onions, sour cream, guacamole, and salsa before serving.
Notes
- For a leaner version, use ground turkey or chicken instead of beef.
- Feel free to swap black beans for kidney beans, pinto beans, or chili beans.
- If making ahead, refrigerate the casserole and bake it later, adding a few extra minutes to the cooking time if chilled.
- For a spicy kick, add sliced jalapenos or hot sauce to the casserole.
- Leftovers keep well in the fridge for 3-4 days, and it can also be frozen for up to 3 months.
