Description

Refreshing Watermelon Mint Popsicles made with fresh watermelon, mint, and lime juice. These easy homemade popsicles are naturally sweet, hydrating, and perfect for hot summer days.


Ingredients

  • 6 cups seedless watermelon, cubed
  • 1/4 cup fresh mint leaves, packed
  • 2 tablespoons fresh lime juice
  • 12 tablespoons honey or maple syrup (optional, to taste)
  • 1 pinch sea salt
  • 2 tablespoons water or coconut water (optional, for blending)

Instructions

  1. Cut the watermelon into cubes, removing the rind and any seeds.
  2. Wash and dry the fresh mint leaves, removing tough stems.
  3. Add watermelon, mint leaves, lime juice, optional sweetener, sea salt, and water or coconut water to a blender.
  4. Blend until completely smooth. Taste and adjust sweetness if needed.
  5. For a smoother texture, strain the mixture through a fine-mesh sieve if desired.
  6. Pour the mixture evenly into popsicle molds, leaving a little space at the top.
  7. Insert popsicle sticks according to the mold instructions.
  8. Freeze for at least 6 hours or overnight until fully solid.
  9. To serve, run warm water over the outside of the molds for a few seconds and gently remove the popsicles.

Notes

  • Use ripe watermelon for the sweetest flavor.
  • Adjust the amount of mint according to your taste preference.
  • No additional sweetener is needed if the watermelon is naturally sweet.
  • Store popsicles in an airtight container in the freezer for up to 2 months.
