Description
Refreshing Watermelon Mint Popsicles made with fresh watermelon, mint, and lime juice. These easy homemade popsicles are naturally sweet, hydrating, and perfect for hot summer days.

- 6 cups seedless watermelon, cubed
- 1/4 cup fresh mint leaves, packed
- 2 tablespoons fresh lime juice
- 1–2 tablespoons honey or maple syrup (optional, to taste)
- 1 pinch sea salt
- 2 tablespoons water or coconut water (optional, for blending)
Instructions
- Cut the watermelon into cubes, removing the rind and any seeds.
- Wash and dry the fresh mint leaves, removing tough stems.
- Add watermelon, mint leaves, lime juice, optional sweetener, sea salt, and water or coconut water to a blender.
- Blend until completely smooth. Taste and adjust sweetness if needed.
- For a smoother texture, strain the mixture through a fine-mesh sieve if desired.
- Pour the mixture evenly into popsicle molds, leaving a little space at the top.
- Insert popsicle sticks according to the mold instructions.
- Freeze for at least 6 hours or overnight until fully solid.
- To serve, run warm water over the outside of the molds for a few seconds and gently remove the popsicles.
Notes
- Use ripe watermelon for the sweetest flavor.
- Adjust the amount of mint according to your taste preference.
- No additional sweetener is needed if the watermelon is naturally sweet.
- Store popsicles in an airtight container in the freezer for up to 2 months.
- Add strawberries, pineapple, or mango for flavor variations.
- For creamier popsicles, blend in coconut milk or Greek yogurt.
