Instructions
- Make the Hot Honey: In a small saucepan, combine honey, apple cider vinegar, Sriracha, minced garlic, and red pepper flakes. Warm gently over low heat until the mixture begins to simmer, then remove from heat and let it cool to develop flavor.
- Prepare the Whipped Feta: While the honey is cooling, place feta crumbles, cream cheese, and cottage cheese in a food processor. Blend until the mixture is smooth and creamy, scraping down the sides as needed to ensure a consistent texture.
- Toast the Bread: Slice a baguette into thin rounds and place them on a baking sheet. Toast in the oven at 375°F for 5–7 minutes on each side until golden and crisp. Allow to cool slightly before assembling.
- Assemble the Crostini: Spread a generous layer of whipped feta onto each toasted slice. Arrange the crostini on a serving platter in a single layer for easy presentation.
- Finish with Toppings: Sprinkle each piece with chopped pecans and torn rosemary. Drizzle with the cooled hot honey just before serving for the perfect sweet and spicy finish.

- Make both the whipped feta and hot honey a day in advance for convenience. If you don’t have a food processor, mash the cheeses together by hand for a chunkier, rustic texture. For a vegan version, substitute plant-based cheeses and use maple syrup with chili flakes in place of honey.
