  • 23 Tablespoons Extra Virgin Olive Oil
  • 1 Cup Arugula
  • Honey (for drizzling)
  • 2 Tablespoons Pumpkin Seeds
  • 2 Cups Butternut Squash, cubed small
  • 2 Tablespoons Olive Oil
  • 1/4 Cup Brown Sugar
  • 1/2 Teaspoon Cinnamon
  • 1/4 Teaspoon Salt
  • 1/4 Teaspoon Black Pepper
  • 8 Ounces Goat Cheese, room temperature
  • 1/2 Cup Heavy Cream

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a medium bowl, combine the butternut squash, olive oil, brown sugar, cinnamon, salt, and black pepper. Toss until evenly coated.
  3. Spread the butternut squash onto a rimmed baking sheet lined with foil and bake for 18-20 minutes, or until tender. Let it cool slightly.
  4. While the squash is roasting, slice the baguette into 12 pieces and place them on a baking sheet. Brush each slice with olive oil.
  5. Toast the baguette slices in the oven on the lowest rack for 7-9 minutes, or until golden and crispy.
  6. In a food processor, combine goat cheese and heavy cream. Blend until smooth and creamy. Transfer to a bowl and chill if desired.
  7. Spread the whipped goat cheese on each baguette slice.
  8. Top each slice with arugula, roasted butternut squash, a drizzle of honey, and a sprinkle of pumpkin seeds.
  9. Serve immediately and enjoy!
