- 1 Baguette
- 2–3 Tablespoons Extra Virgin Olive Oil
- 1 Cup Arugula
- Honey (for drizzling)
- 2 Tablespoons Pumpkin Seeds
- 2 Cups Butternut Squash, cubed small
- 2 Tablespoons Olive Oil
- 1/4 Cup Brown Sugar
- 1/2 Teaspoon Cinnamon
- 1/4 Teaspoon Salt
- 1/4 Teaspoon Black Pepper
- 8 Ounces Goat Cheese, room temperature
- 1/2 Cup Heavy Cream
Instructions
- Preheat your oven to 400°F (200°C).
- In a medium bowl, combine the butternut squash, olive oil, brown sugar, cinnamon, salt, and black pepper. Toss until evenly coated.
- Spread the butternut squash onto a rimmed baking sheet lined with foil and bake for 18-20 minutes, or until tender. Let it cool slightly.
- While the squash is roasting, slice the baguette into 12 pieces and place them on a baking sheet. Brush each slice with olive oil.
- Toast the baguette slices in the oven on the lowest rack for 7-9 minutes, or until golden and crispy.
- In a food processor, combine goat cheese and heavy cream. Blend until smooth and creamy. Transfer to a bowl and chill if desired.
- Spread the whipped goat cheese on each baguette slice.
- Top each slice with arugula, roasted butternut squash, a drizzle of honey, and a sprinkle of pumpkin seeds.
- Serve immediately and enjoy!
