The Yule Log Cake, or Bûche de Noël, is a traditional European holiday dessert. This festive treat features a light chocolate sponge cake filled with sweet whipped cream and coated with a rich chocolate ganache. It’s rolled into the shape of a log to resemble a yule log, making it a perfect centerpiece for Christmas celebrations.

- 1 cup heavy cream (for whipped filling)
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract (for filling)
Instructions
- Preheat the oven to 350°F and line a 10″x15″ baking sheet with parchment paper.
- Whip egg whites in a stand mixer until soft peaks form. Set aside.
- Whisk egg yolks and sugar until pale and thick, then add vanilla and whisk to combine.
- In a separate bowl, combine cake flour, cocoa powder, baking powder, espresso powder, and salt.
- Fold the dry mixture into the egg yolk mixture. Gently fold in the whipped egg whites in two stages to maintain airiness.
- Spread the batter evenly on the baking sheet and bake for 10-12 minutes or until it springs back when touched.
- While the cake is baking, prepare a clean kitchen towel and sprinkle it with powdered sugar.
- Once the cake is baked, carefully turn it onto the towel, remove the parchment paper, and roll it up gently with the towel. Let it cool completely.
- For the ganache: Heat the heavy cream in a small saucepan until it just starts to bubble. Pour it over chopped chocolate, butter, vanilla, and salt. Stir until smooth, then let it cool to room temperature.
- For the whipped cream filling: Whip the heavy cream, powdered sugar, and vanilla until stiff peaks form. Set aside.
- Once the cake is cooled, unroll it gently. Spread an even layer of whipped cream over the cake, leaving a small border. Re-roll the cake and place it seam-side down on a platter.
- Cover the rolled cake with a thick layer of chocolate ganache, using a fork to create texture resembling a log.
- Decorate with cranberries, rosemary, and powdered sugar to mimic snow.
Notes
- Be careful not to overbake the cake; it should be light and moist to avoid cracking when rolling.
- If the cake is difficult to roll, you can place a damp cloth over it while it cools to retain moisture.
- If you’re making this ahead of time, you can freeze the un-decorated cake and decorate it just before serving.
- The ganache should be cooled but not too thick when you apply it to the cake for a smooth finish.
