Instructions

  1. Preheat the oven to 375°F and lightly grease two 9-inch round cake pans with spray oil and flour to prevent sticking.
  2. Wash and shred the zucchini, then chop the pecans and set aside.
  3. In a large mixing bowl, whisk together eggs, granulated sugar, and olive oil until smooth and well combined.
  4. Add cinnamon, salt, baking soda, shredded zucchini, and chopped pecans, stirring gently to distribute evenly.
  5. Gradually mix in the flour, one cup at a time, until a smooth batter forms. Avoid overmixing.
  6. Divide the batter evenly between prepared cake pans and smooth the tops lightly.
  7. Bake for 35 to 45 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove the pans from the oven and cool on a wire rack for about 20 minutes. Carefully loosen edges with a knife and remove cakes from pans to cool completely.
  9. To make the frosting, beat softened cream cheese, butter, and vanilla extract together until creamy and smooth.
  10. Add powdered sugar one cup at a time, mixing on low speed until combined, then beat on medium-high speed until fluffy.
  11. Place one cake layer on a serving plate and spread about one-third of the frosting on top.
  12. Add the second cake layer and frost the top and sides evenly using a spatula or piping tool.
  13. Top with chopped pecans if desired and refrigerate until ready to serve.
